Serpent Player's Amazing Cheesecake Recipe

(dessert for 6-8 deserving serpentists)

2    8oz packages Philadelphia Original cream cheese
1/2 15 or 16 oz. can (or, 3/4 cup) prepared (sometimes labeled 'solid pack' ) pumpkin
1/2 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon pumpkin pie spice (or, equal parts cinnamon, nutmeg, ginger and allspice to make 1/2 teaspoon)
2    eggs
1    graham cracker pie crust

Preheat oven to 350 degrees F.

Using a food processor with mixing implement (or a blender or electric mixer), soften room-temperature cream cheese by beating it with mixer for a while. Or, place cream cheese by placing it in microwave-safe mixing bowl and microwave on 'high' for one or two minutes  (cheese should have about same consistency as the pumpkin). Add pumpkin and sugar, mix well. Add vanilla and spice slowly as mixing continues. Use spatula to scrape sides of mixing container once or twice during mixing. When mixture is complete, slowly mix in the eggs just enough to combine thoroughly, but don't whip the mixture.

Pour mixture into prepared crust, and level off; it should fill crust exactly to rim. Bake at 350 degrees F, for 45 minutes or until center responds with firmness to side of a butter knife or similar implement.

Place pie in refrigerator; may be served anytime after 4 hours of cooling.
